 3   zucchini; sliced 
 3  sm  onions onions; sliced 
 1   Clove garlic, raw garlic; crushed 
 3   Large tomatoes, peeled and sliced 
   salt 
   and pepper 
   parsley; chopped 
   lemon rind; grated

Cook zucchini, onions and garlic in a small amount of water for 5
minutes. Add tomato and cook for 3 minutes longer. Season to taste.
